Cake Recipe

I have been reading some food blogs.  Right now I’m working my way through thepioneerwoman.com  She has some amazing recipes, and none are real difficult (from what I can tell).  I thought I would throw up some of my favorite recipes occassionally.  Here is my favorite cake recipe of all time.  It’s a chocolate cake that always turns out, is moist from start to end (as long as it stays covered), and is super easy to make.  Some people may call it a wacky cake.  In our family, it’s Crazy Square Chocolate Cake.  The crazy part is there is no dairy or eggs in it.  From what I have read online, it came about when eggs were rationed, and people had to get creative with baking/cooking.  Enough rambling, here it is.  I’m not fancy like The Pioneer Woman with photos, and I’m not sorry about it!

Crazy Square Chocolate Cake
3 c. flour
2 c. sugar
2 t. baking soda
2 t. salt
1/2 c. cocoa
1 c. oil
2 T. vinegar
2 t. vanilla
2 c. cold water

Combine all ingredients and mix.  Bake for 30-35 minutes at 350° F.

That is all there is to it.  As a note, this will NOT bake in a 9×13 pan.  You can make them into cupcakes, use rounds, or use an 11×17 pan.  Just not a 9×13.  If you give it a try, let me know how it turnned out for you.
